Jelly!!

Mmmm jelly!

I went food shopping before work the other day and forgot my groceries in my car during my shift! Oh no! But wait..it’s winter! My food didn’t go bad, but my fresh berries froze a little bit 😦 I have been trying to eat them in time. I bought a lot though..so it wasn’t gonna happen.

When bananas start to go, how do you save them before it’s too late? Banana bread! So how do you save berries? Actually berry bread sounds pretty good…

Jelly!

I was feeling adventurous and decided to make my own jelly! I found the original recipe that I was going to use at: http://vegweb.com/recipes/8-minute-awesome-strawberry-jam But being me, I did my own thing a little bit.

For starters, I had 4 cups of fresh fruit instead of 2. So for sugar, I did 1/3 cup white sugar and 2/3 cup of brown sugar. Honestly I love coconut sugar and I would remake it with that. Probably with about 3/4 of a cup. It didn’t come out overly sweet, but I eat way too much sugar anyway.

I know a lot of people aren’t super into cornstarch. I love knowing that it’s gluten free and easy..plus there was a sale on bulk cornstarch so I came home to find a large amount in the cabinet. It’s best used with cold water so it doesn’t clump.

I used 3 cups of strawberries and 1 cup pf blackberries. It came out super yummy! It almost tastes like a black cherry jelly i used to buy.

I used an induction stove top, so I guessed with the temperatures. It seemed to work for me, so I think i did it right!

Recipe:

  • 4 cups fresh fruit (as ripe as possible)
  • 3/4-1 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  1. Place fruit in pot and mash until desired consistency. Personally, my arm got tired and just left it chunky! Stir in sugar.
  2. I let some water sit in a small bowl with a few ice cubes. I had the 2 tbs of cornstarch in a separate small bowl. I got my tbs measure out and poured the 2 tbs of water right over the cornstarch. Stir until completely dissolved.
  3. Pour cornstarch mixture into pan and stir well.
  4. Bring to a high boil (I did this on 220(○F) on my stove) and let boil for 1 minute.
  5. Turn down to low boil (175 on my stove) for 6 minutes, stirring every 30 seconds. And…done!
  6. I was putting it in a glass jar, so i let it cool first.
