Vegan Pancakes :)

I came across this video by Reese Regan:

 

 

I thought the pancake recipe was amazing!

Ingredients:

  • 2 bananas
  • 1 1/4 cup gluten free steel cut oats
  • 1/2 cup gluten free flour
  • 1 1/2 of milk (almond or cashew for me!)
  • 2 tsp baking powder

Directions:

  1. heat up a pan to high heat and oil (even if it has a low smoke point, I used coconut oil)
  2. pour some of the batter into the pan
  3. once the pancake starts bubbling in the middle, flip!
  4. enjoy stacks on stack of vegan and gluten free pancakey goodness 🙂
