What is Gluten?

“A yellowish-gray, powdery mixture of plant proteins occurring in cereal grains such as wheat, rye, barley, and corn. The gluten in flour makes it ideal for baking, because the chain like protein molecules of the gluten trap carbon dioxide and expand with it as it is heated. Gluten is also used as an adhesive and in making seasonings, especially monosodium glutamate (MSG).”

What does that mean?

Gluten is a mixture of proteins found in certain grains (not just wheat!) It also means that the reason gluten free products are rumored to be “mushy” or “crumbly” is because gluten is what makes bread “spongy” and “airy”. One of the most important reasons that I chose this specific definition, is that it is a great example of where and why companies hide gluten. “Natural seasonings”, “spices”, “natural and/or artificial flavorings”, can all have hidden gluten!

How Do I Know When Oats are Safe?

“Oats are inherently gluten-free, but are frequently contaminated with wheat during growing or processing. Several companies (Bob’s Red Mill, Cream Hill Estates, GF Harvest (formerly Gluten Free Oats), and Avena Foods are currently among those that offer pure, uncontaminated oats. Ask your physician if these oats are acceptable for you.

What is the Difference Between a Gluten Allergy and Celiac?

Allergies are usually defined as an “abnormally high sensitivity” to an outside allergen. Celiac (or Coeliac) is an autoimmune disease. It affects the intestines, where it causes damage and severe symptoms/discomfort.
